Try Muir Woods north of SF, and a boat trip out the the Channel Isles between Cambria and Santa Barbera. If you’re lucky you might see a whale. Get to all parks early to avoid football spectator style crowd. Unfortunately PCH1 had a landslide earlier this year as you’re probably aware, so not possible to drive the full length.
